Donut Shop Safety
You will want to be aware and alert of certain conditions in the donut shop. You
will be working with hot oil, commercial mixers, sharp objects, greasy floors, all while producing a donut line and
possibly working by yourself.
When setting up for a nights bake prepare the shop for safety by;
1. First turn on the exhaust fan and make up air.
2. Place cardboard in front of fryer and glazer that you can reuse “this
will help prevent slipping and makes for easy clean up”.
3. Keep your sink area dry “have mops handy” as not to track grease on the
bottom of shoes.
4. When washing utensils always place sharp objects and knives to the side
of the sink and let your helper know to do the same.
5. When frying donuts position the belshaw arm for something to grab
incase of a fall “for you will want to instinctively grab the fryer which will burn you”.
6. Never wear long sleeved shirts around any dough mixer and keep area clean
from oil, flour and water.
7. After turning off the dough mixer always set speed of mixer to the
lowest possible setting, (Very important.).
8. Always double check mixer setting prior to scraping bowl and/or starting
of dough mixer “very important.”
9. Use good body mechanics, smooth fluent and controlled actions,(Efficiency
and timing is all you need and do not be in a rush.).
10. Metal scrapers can be very sharp, always scrap away from you with
special attention to scraping down fryer when hot.
11. When frying donuts always treat fryer with utmost respect and avoid
multi-tasking to reduce accidents.
12. Avoid conversations and distractions when adding fresh shortening to a
hot fryer ”most accidents are fryer related.”
13. Always ask for help when lifting heavy bowls or place bowl on bucket for
better body mechanics when lifting.
14. Good lighting, clean work area, good preparation with common sense and
you will have a great bake. Have fun.
