Donut Fryers
Lucks or belshaw Donut Fryers or large high capacity donut
fryers are designed for instantaneous heating recovery when frying donuts.
Natural gas fryers are most efficient, more importantly they
are reliable with minimum maintenance required. I prefer this fryer to electric type models for there is no
heating element that potentially will burn out. Additionally, you do not have to wire 220v into an existing
electrical panel that may already be max out.
Another benefit, gas fryers heat much faster! That is
important when you consider frying time as gas fryers reach set “desired” temperatures much faster due
to cooling from donuts in fryer. Their reheating time is approximately 2 minutes.
Electric fryers can take 3-4 minutes. This may not sound
like much however when you take into account a large bake it can add an hour or more. In addiction you have to
synchronize when you drop the donuts in the fryer “with the belshaw donut depositor” because you do
not want the fryer firing up as the donuts drop, for the cake donuts will over-turn and produce an undesirable
product.
If your location has no natural gas service and you must go
electric, purchase an extra heating element as a back-up.
Buying Tips:
When considering purchasing an electric donut fryer
(including
automated donut machines.).
1.
Make sure electric heating "coil" for fryer is easy to
acquire
in the event heating element burns out. Heating elements
tends to burn out when needed most (this is especially important for donut machines if you out side the United
States.).

Make sure existing electrical panel will support the additional
220-V load or you may have to install a sub-panel or purchase a Gas donut fryer.
3.
With all fryers (especially gas fryers) if purchased used
request a picture or visually check the under side "belly" of
fryer shortening well. If the fryer has been improperly fired up
without shortening in well, "or shortening not broken up prior to firing up" the insulation under the
shortening well, will have burns or non existing insulation on sidewalls of shortening well from improper
usage.
And of course with all donut fryers make sure frying screens are available and glazing "transfer" screens are
the same size as frying screens, this makes for easy work in the shop and ideally your transfer screens are the
same size as donut "display" sheet pans for additional time saved in the
shop.
